Added explicit var to control boot fs type.
Since use of GPT does not necessarily imply lack of wanting the boot
partition formatted and mounted.

Fix for not-tar'ing-stage-4 after unpack.

Fix to cope with dir permissions.
During regular operation the parent directory ends up owned by root and
the sudo is required for the mkdir to succeed.

Fix to ensure debootstrap finds its functions.
